This is my favorite Mexican dish. There is a restaurant in my town, that adds bacon to it. It has a fabulous flavor. Try it.
Great recipe but for me, bring on the heat. As a dedicated chili-head, I'm all about the heat. If it doesn't sear your nose hairs, it's for little old ladies and children. I added 1 scorpion pepper, which as I found out, was hotter than hell. Even for me, it was out there but it worked with the recipe. I think next time, I'll try it with a habanero. Incidentally, the Texas Salt Company sells the best salt I've ever purchased. They have a smoky scorpion salt that is da bomb on grilled burgers. Give it a go.☠

Chef Billy, I have an extremely picky eater that is 9 year old and obsessed with pasta. He will eat it plain. I love your fresh egg pasta so much, by chance, do you have a pasta recipe that incorporates cauliflower or spinach? Something to add some vitamins in it but still taste awesome?
The only Chile which adds heat is the Chile de arbor. Whe using dried Chile's I usually hydrate them in hot water, blend and strain
