Ingredients for 2 servings:
2 tablespoons olive oil
1 small yellow onion, finely chopped
2 garlic cloves, minced
2 tablespoons tomato paste
1 red bell pepper, finely chopped
1(14-ounce) can diced tomatoes/ 2 cups fresh peeled tomatoes
1 teaspoon ground cumin
1 teaspoon paprika
Β½ teaspoon red chili flakes
ΒΌ teaspoon chili powder
2 teaspoons garlic powder
1 tablespoon fish sauce/ water
Salt and pepper, to taste
4 large eggs
ΒΌ cup crumbled feta cheese
Fresh parsley, chopped, for garnish
Crusty bread, for serving
Preparation:
1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic. Cook until softened, about 5-7 minutes.
2. Add in the diced red peppers, tomato paste, cumin, chili powder, paprika, red pepper flakes, garlic powder, salt and pepper. Cook for another minute until fragrant.
3. Pour in the diced tomatoes and fish sauce. Let the mixture simmer, covered, for about 10-15 minutes, until it thickens slightly.
4. Make small wells in the sauce with the back of a spoon, and crack an egg into each well. Cover the skillet with a lid and cook until the eggs are just set, about 5-8 minutes.
5. Top with feta cheese and garnish with chopped parsley. Serve hot with crusty bread for dipping.
I did this with chopped bacon as my first ingredient and cooked it halfway before adding the onions and peppers. It was delicious.

I tried making it and i littrely made something another it was almost burn from down and my edd were raw from up and ober cooked from down and something kept giving it more worst taste what i made was surely 2/10
