  1. I did not have leeks so I used a Vidalia and a yellow onion.
    When I cook, I clean out the refrig. I added a little left over asparagus and in addition to cheddar, i added a little piece of swiss and some romano. A glug of dry white wine and finish with a splash of sherry.
    Also used Red Mill potato starch(instead of flour) just because I had it. Used Half and half cuz that is what I had.

I'm obsessed w that, I've made it many times and followed different recipes, but I need a real chef approach… I know it's a long process, but not complicated.
