A much-loved staple in our Ohio home every summer! My mom would simmer the beans in homemade chicken stock with smoked ham shanks before adding the potatoes. Served with fresh corn bread, this was a one-bowl meal from heaven.
She did almost the same meal with kale and great northern beans in the late fall. Also delicious!

Green beans need to well cooked! I don't want crispy green beans. This dish is really good made with a "cottage ham". Cottage ham is what people not from Cincinnati call a smoked pork butt! The extra fat from the pork shoulder make it delicious!!

My Grandmother had me "snap these here beans" with her every summer. She also had me canning veggies, fruits and various jams and jellies with her!!!! Some of the greatest memories I have her are over food and kitchen prep! I have tried to pass on as many of these traditions as I can to my daughter.
