  3. Hi, Candice. I love your videos, but am a little confused with this one. You show yourself salting one side of the eggplant but later tell us you salted both sides of the eggplant — okay, no big deal. But then you show yourself oiling only one side of the eggplant but don't tell us if you really oiled both sides. Should we assume that, like the salting, the oiling was on both sides? Or should we assume that, because you didn't tell us so, you really did mean for us to oil only one side — like if you oiled both sides it might make the eggplant way too oily. Do I oil both sides or not? Thanks.

  4. In addition to the salt. You could also place a paper towel over them. And put some weight on top of them. And sit them over a large plastic container, backing tray. Anything with length to hold the rack, and depth to collect the moisture.

    The weight will squeeze the water out and it'll drain into the sink. It really speeds up the process.
