Try removing a third of your flour and replace it with Custard Powder….YES, Custard Powder. In the 50s in Singapore, my mum was showing our Amma Chi Ching Heung how to make F&Cs. Ching then showed her the custard powder mix for staggeringly good batter. Mum was one of five girls, all of whom were waiting to learn this trick when we got back to UK. Batter in our family has always made this way since the 50s.
