I always use raw carrots and corn in my shepard's pie, because it adds a really nice sweet crunch. I also add more of these veggies than the video did.
This was one of the dishes I grew up with (here it's called "pastel de papa") and I so missed its texture once I turned vegetarian. Thank you for bringing back so many memories!
If you’ve used a beef substitute it’s technically a Cottage Pie not a Shepherds Pie because that’s made with minced lamb. xXx

I made this last night. I would double the potatoes to make the top thicker (mine was spread pretty thin). Other than that one alteration, I thought this was delicious! And yes, more instant pot recipes please.
