  1. Oh no… I have a scoby sitting in a sealed pouch… now I am afraid to open it!!!!!

    Seriously though… I want to make elderberry mango ginger kombucha. I think i have figured out i need to make plain kombucha first, then second ferment with the fruit. Just not sure how to flavour it… ratios etc.

  2. Fun fact (I used to work at a kombucha company) you don’t even need a SCOBY (symbiotic culture of bacteria and yeast) to start kombucha! All you need is a bottle of booch. You can grab one from the store – something with minimal ingredients or unflavored works best. Throw the whole bottle in with your tea and sugar. It will grow a SCOBY as its fermenting and you can honestly compost them as they pop up. Happy booch making!
