I love you so much but Queso Fundido literally means melted cheese. So it's melted cheese or melted cheese with chorizo (Con chorizo). There is nothing else in it. I swear! I have been eating it all my life. This whole thing of putting salsa in it is some new thing.

No need of oil to fry chorizo, it has more than enough fat.
Good cheeses but try the Asadero kind, melts and tastes great.
Keep the salsa for the taco, no need to put it in the middle.
