You shouldn't use egg pasta with alfredo sauce. In italy fresh pasta is only used for things like bolognese.

So I just tried this recipe and it's perfect! I actually have so much leftover dough because the amount of pasta from half the dough was already insane 🙂 I love the simple taste of fettuccine alfredo. I absolutely hate cream, so this was perfect for me – just pasta, salt, cheese, and butter. Thank you so much, Billy.
