  1. Any suggestions on determining when you should turn off the oven? Should it still look very uncooked? I think there can be a lot of variance at this stage due to how hot water is, how large water bath pan is, oven temperature variation, etc. Would be helpful to have added description of what the cake should look like before turning off heat. Thanks.

  2. after your pour the cookies into the form you take out some because at first they are far too many for the form you are using. typical editing without explaining, it is not good cooking instructions. and the same goes for the surface of the ganache.

  5. Hi Billy I made this cheesecake with your wonderful instructions and tips. It turned out perfect! It didn’t crack and used strawberries. I even scored it as you did. My family is super impressed and sharing your video like crazy! ❤😂 I made a different one without a water bath and it didn’t cook evenly and cracked. It was good and had a garnished on top so you couldn’t see it, but in some areas it was soft. Your tips makes it perfect! I love the coffee in there too! Wished I could post a picture to show you.
