  1. When a friend told me they threw away the skin when they got a food side of salmon, I was like, thatโ€™s crispy skin, itโ€™s so good. Wouldnโ€™t say itโ€™s an alternative to bacon, but still good eats.

  3. I'm a regular at a place that sells freshly smoked salmon, trout, sturgeon, sable, whitefish, and catfish. All that fatty skin cooks up like bacon so well. Except sturgeon. That's like leather.
