I make a tofu egg salad and put it in my potato salad! Don't forget the black salt!!
My favorite is potato salad but I would add chopped New Mexico Hatch green chile. Sooooooo good!

do you put macaroni or potato in egg salad? no? then WHY do you put egg in macaroni AND potato salad. that don't make no sense.
i miss these two salads so finally broke down and started making my own from scratch this summer. PITA because of the additional prep but worth the hassle =)
