I frequently make this Vegetable Stroganoff:
Butter and/or oil
1 medium red onion, chopped
2 or 3 carrots, chopped in quartered rounds
1 red pepper, chopped
8 oz. sliced baby Portobello mushrooms
Garlic
Pinch cayenne
smoked paprika
2 to 3 t flour
1 heaping t Dijon
½ c vegetable broth
Sherry
s & p
Cream or almond milk
Sour cream
½ bunch parsley, chopped
Cook onion, carrot, and pepper separately until caramelized then remove from pan.
Cook mushrooms until most moisture gone and remove from pan.
Add garlic and cook a minute or two.
Add Cayenne and paprika and cook a minute.
Return vegetables and mushrooms to the pan.
Sprinkle with flour and cook a few minutes.
Add broth, Dijon, and sherry and cook until thickened.
Add cream and sour cream and continue to cook but do not boil.
Add s & p.
Taste and correct seasonings.
Add parsley and stir.
Serve over rice or linguine.
Looks so good. I like one pot meals sometimes! The only thing I would have added or included is good old saltine crackers and fresh ground black pepper
Made this tonight but used mushrooms instead of vegan mince. It was absolutely delicious. I include nutritional yeast as well! Thanks for this. Perfect for an autumn evening. Love from Ireland 🇮🇪 x

I'm not a fan of sausage. I might just use tofu or TVP. It would be good without the sausages.
I love pasta. I would omit the chili flakes as my stomach can't deal with spicy. But it definately looks like a very quick yummy dinner.

Yeah it's weird, the only difference between stew and casserole here is that one is cooked on the hob (stew) and the other (casserole) in the oven – and even that's not a hard and fast rule. What you guys call a casserole we'd call a bake.

Its nothing against you but i love how these video are always '' Easy vegan meals '' but 2/3 of the ingredients CANT be found in rural place :'( It sucks… I cant make these recipes, makes me wonder why its so hard to eat vegan after all these years of trying. We can never win

Cheaper or "off brands" of Worcestershire sauce are often vegan, but some are tastier than others so find the one you like the best. A tablespoon of good Tamari could also be used if all else fails.
Please take off that lipstick it's such a mess you are so beautiful you really don't need it.

Made the stroganoff last night, and I'm eating leftovers right now, at 9AM. The sauce is amazing. I cooked some mushrooms first, then removed them from the pan, then made the rest and added the mushrooms back in when I added the cream cheese and sour cream. I wish I had let my pasta cook in the broth and cream a few minutes longer because it was just a hair too al dente and wouldn't soften up more once those were added. So I added more broth to try to get it liquidy enough, and that helped. The leftovers this morning are nice and soft though!
I used Impossible ground, which only has 12 ounces in a package. But with the addition of the mushrooms (8 ounces) I didn't add more and didn't change any of the rest of the ingredient measures (aside from the aforementioned addition of more broth, but that cooked down). Next time I make it I will use at least 16 ounces of beefless ground, because the bits of "meat" were soooooo good in this recipe. And maybe more mushrooms, too, because mushrooms.
