Ikyfl I followed this recipe to a T and it’s a no for me. Other people might love it, but the vital wheat is just so strongly flavored. BUT the texture… was god sent!

What kind of seitan are you using? Mine comes out a lot more spongy and is hard to mold. I use the bobs red mill brand. Your vital wheat gluten looks more like dough, and seems easier to mold and pull apart.
