I love lasagna soup but i use mafalda noodles bc i can't with the broken lasagna noodles. Mafalda looks like tiny lasagna noodles anyhow.
So worth the time it takes to make! She makes it look so easy but in reality this is like 2 hours of prepping and cooking for me lol. Vegan lasagna soup is one of my fave recipes of all time! ❤
